Spaghetti and Meatballs

Been craving for some pasta? then this low carb , healthy and delicious spaghetti and meatball recipe is for you!


250 g zucchini spaghetti*
250 g lean mince*
15 ml oats cooked
salt and pepper
30 ml tomato paste
30 ml chopped basil
30 ml chopped parsley
4 small onions chopped in big chunks
60 ml vegetable stock
10 ml Corn starch


Heat up oven to 180°C 

To make the meatballs mix the mince, oats, salt and pepper together, form small balls pressing the mince in your hand. Should make about 6 small balls.
To make the tomato marinara sauce mix together tomato paste,chopped basil,parsley, vegetable stock and corn starch.
In a oven proof casserole dish, place in the meatballs and chopped onions, pour over tomato base sauce and cook in the oven on 180°C for about 25 minutes or until cooked.
To make the spaghetti, place the zucchini pasta in a frying pan with some water for 10 minutes or until tender.

Toss the pasta in a serving dish and pour the meatballs and sauce on top.
Serve with fresh tomatoes and basil on top.

*you can use chicken mice instead of beef mince.
*if you do not have zucchini pasta you can make your own by using a vegetable peeler. gives it a fettuccine effect.
