Juicy Stuffed Chicken breast

4 chicken breasts
2 cups spinach (fresh or frozen)
1/2 an onion chopped
1 teaspoon garlic
125 ml mushrooms chopped
100 ml fat free cottage cheese
5 ml parsley
5 ml Origanum
5 ml lemon and herb spice
30 ml tomato paste
pinch salt and pepper
20 ml olive oil/ coconut oil


  1.  in a pan (on medium heat) add the olive oil and fry onions until soft
  2. add garlic, mushrooms, parsley, origanum , salt and pepper, fry until mushrooms are cooked
  3. add the cooked spinach and cottage cheese, mix well and take off heat
  4. turn oven on 180°C
  5. cut the chicken breasts in half
  6. scoop some of the spinach stuffing into the chicken and secure with a toothpick
  7. mix the 5 ml oil , tomato paste and lemon and herb spice
  8. cover the stuffed chicken breast in the tomato paste combo
  9. lay the chicken breast in a oven pan
  10. cover the pan in foil
  11. put in oven for 25 min or until cooked
  12. OPTIONAL _ add some cheese on top and melt.
  13. Serve with a fresh salad

please look for 99% tomato paste, not tomato sauce as it contains loads of sugar.
